Scrambled Eggs & Etc.

A little olive oil
1 Cup Egg Whites
1 Omega-3 Egg, beaten
1 cup of fresh veggies (bell peppers, broccoli, mushrooms, onion, etc.)
A big handful of spinach
1/2 an avocado

Instructions

Heat a non-stick skillet on medium-high. Put a little olive oil and throw in all the veggies and spinach (but not the avocado! That's a fruit). Season with salt and pepper. Keep them moving in the pan until the spinach wilts. Beat the egg and whites with a little salt and pepper, then add them to the pan. Scrape the cooked eggs of the bottom of the pan continuously until eggs are dry enough for your taste. Slice the avocado and place over the eggs. Serve and smile.
